Chocolate Avocado Pudding

Are you looking for something delicious and decadent? This rich and delicious NO-COOK dessert is one that you can whip up in no time. It is rich in fiber and antioxidants and you will hardly believe that it is actually good for you! Even though the fats are healthy fats, a little goes a long way, so serve in smaller portions- 2-3 oz at a time. Enjoy!

3 ripe avocados

3 tbsp raw cacao powder

1-2 individual packets organic stevia

1 ½ tsp organic vanilla

1/8 cup coconut or almond milk

1/8 tsp salt

1/8 tsp cinnamon

3-4 tablespoons melted dark chocolate

Prepare avocado.  Remove pulp and place in food processor.  Add cacao powder, vanilla, and nut milk.  Pulse then blend until smooth.  Add cinnamon, salt and 1 packet of stevia;   slowly add melted chocolate.   Blend well.  Taste.  If you want it sweeter, add more stevia. 

Serve in small dishes.  You may top with coconut cream (whipped), granola, raspberries. 

A little goes a long way…  Just a taste will satisfy. 

Coconut Cream-

1 Can of Coconut Milk. 

½ tsp of vanilla

½ stevia packet.

Chill can of Coconut milk overnight or for a least 4 hours.  Remove only the coconut pulp from the can.  Discard the water.  Put the coconut solid into a mixing bowl.  With a mixer, mix well.  Add vanilla and stevia to taste.
